Wild Fermentation
Healthy soil, ample biodiversity, and minimal chemicals are required to promote quality natural yeasts. These yeasts ensure our wine has the complex flavors that truly reflect our unique terroir.
Minimal Sulfites
We use meticulous grape sourcing, gentle handling, and careful cellar practices. While all wines naturally contain sulfites, we add only a minimal amount at bottling for aging stability.
No Toxic Additives
Wines can contain up to 73 hidden chemical additives. At Peony Lane, we use only a touch of sulfites for aging stability, keeping our wine pure and natural.

2021 Satoshi’s Reserve
Satoshi’s Reserve, a limited edition release by Peony Lane, expresses Bitcoin’s beauty in Wine form. Though it may not seem apparent on the surface, Bitcoin and Natural Wine have a lot in common. Just as Satoshi guided Bitcoin through its early days and left it to its own devices, a Natural Winemaker’s job is to shepherd the grapes through fermentation and barrel aging before bottling them to become whatever nature intended them to be. Minimal Intervention Wine, meet Minimal Intervention Money.
Vintner, Ben Justman selected Satoshi’s Reserve from the finest barrel of Cabernet Sauvignon from his celebrated ‘21 Vintage. Each of these 210 bottles is numbered and signed.

We practice dry farming, encouraging deeper root growth to access rich nutrients, which enhances the wine's complexity. By avoiding herbicides and pesticides, we maintain a natural, untainted environment, ensuring the purity of our vineyard and the health of our ecosystem—benefiting both the land and your wine experience.
All these efforts allow our Pinot Noir to truly express the unique terroir of our region, creating a wine that is authentically and uniquely ours.
